Managed by owner Vargas with 20 years of expertise, the estate exclusively harvests fully ripe, bright-red cherries. Through meticulous processing—including flotation-based defect removal, dual-phase anaerobic fermentation with specialty yeast cultures, and slow temperature-controlled drying—the beans develop vibrant sweetness and balance.
The innovative anaerobic yeast washed process occurs in sealed tanks where CO₂ displaces oxygen, deliberately slowing sugar breakdown and pH reduction to enhance fruity depth while maintaining clarity. The result is a harmonious cup bursting with notes of rose, peach, strawberry,, framed by a refined, silky body.
